I'm sure I've read somewhere that the "new car smell" is deliberately produced by the manufacturer as a sales aid (you wouldn't want a horrible smell when sitting in a new car, would you?), which would also explain why some new cars smell different from others. Also since many manufacturers probably use the same type of plastics in their cars, the smell of VOC's may not totally explain the differing variety of smells you get from new cars - from memory I'm pretty sure that new Volkswagens smell different from Audis and Alfa Romeos smell different from Fiats.
When commenting on the 500's fragrance dispenser, a motoring journalist said that Fiats have the best new car smell anyway, and from my (limited) experience I agree with that statement.
